Just when we weren’t looking, dairy-free actually got damn well delicious.
When we came across COYO our lives changed forever. Made from 100% natural coconut milk, all COYO yogurts and ice creams (that’s right – ice cream) are free from dairy, gluten, lactose, soya and added sugar. They’re all vegan too – but if none of the above apply to you don’t worry, they are simply very tasty indeed. We’ve got nutritionist Bethany Eaton to thank – she bought COYO to the UK after struggling to find good dairy-free alternatives for her clients. Now the range includes fruit flavours (all natural of course) and even a raw chocolate. Here Bethany shares her favourite ways to enjoy coconutty goodness for both seasoned and new COYO-ers alike:
1. Dairy-Free Decadence
Banana and Almond Butter Ice Cream
Scarily straightforward, just don’t tell your guests:
Ingredients:
2 frozen bananas 1 tbsp almond butter Pinch of cinnamon 2 pitted dates 1 pot vanilla COYOMethod: Whizz it all together in a blender and serve straightaway
2. The Winter Warmer
Coconut Plum Crumble
Ingredients:
8 plums Paleo granola – we love Eat Evolve for their Paleo granola or Spoon Cereals, who make healthy muesli and granola mixes (see more here) COYO vanilla and nutmeg ice cream to serveMethod:
De-stone the plums and place in a pan with a little water and a vanilla bean pod. Cook gently with the lid on until plums soften
Then place in ramekins and cover with Eat Evolve paleo granola or Spoon Cereals. Then place in the oven and bake on 120 degrees for 45 minutes or until browned. Serve with a dollop of COYO vanilla and nutmeg ice cream.
3. COYOmole
Guacamole with a Twist
Ingredients:
1 avocado Squeeze of lime juice Pinch of paprika Garlic Chopped onions 1 diced tomato Natural COYOMethod: Blend the avocado, lime, paprika, garlic, onions and tomato. Stir through a tablespoon of natural CO YO before serving. All you need to decide is whether to go for pittas or crudités…
4. The Frozen Nibble

Ingredients:
5 Chopped strawberries Handful of shelled pistachios 1 pot natural COYOMethod: Mix all ingredients together and freeze until solid. Break up into pieces and store in the freezer. Bet they don’t last the week
5. Perfect Punch

Ingredients:
¼ pineapple ½ peeled lemon 250ml coconut water (we love Unoco) 1 pot natural COYOMethod: Whiz it all up in a blender, stick a straw in and dream of your next holiday…
